The Garden!

     The garden we had this year was very small, and only had the basics for my kitchen in it.  The military transferred us right in the middle of prime planting season.  Between two kids, a husband, and household stuff there was no way i could plant a big garden. The good news is this year I will have plenty of time to prepare.


     I love having the ability to run out to the garden, and grab something for dinner.  It really is fun for me, and my two year old loves to go out with me.  As the end of garden season for area is coming to an end I am making up all kinds of things to freeze, can, or dry for the winter.  In a previous blog I made Pesto to store in the freezer.  My family loves pesto sauces, and really do not think that the batch I made will last us very long.  I will however hold off on using it until I just can not stand it any more.

     I have been daydreaming of the things I can plant next year.  There are so many things I want to plant. However there is only so much room.  I am trying to convince my hubby to make me a raised bed for more space.

Things I know I will plant.
  • tomatoes
  • bell peppers
  • jalapenos
  • spicy basil
  • oregano
  • thyme
  • rosemary
  • black eyed peas
Things I want to plant
  • garlic
  • onions
  • eggplant
  • squash 
  • okra
  • maybe some mint for a few mojitos
     Do you ever think of planting a garden?  What would you plant?  What are your favorite vegetables and herbs? Not sure you have the time. Just plant some herbs in pots, and place them near the door you typically leave the house from.  On your way out take a pitcher of water for the plants, and leave the pitcher on the porch.  Then just take the pitcher back inside with you on your way in.

Pesto

     Well here is a picture of all the things that the garden had to offer last night. We had basil, rosemary, savory, tomatoes, jalapenos, and birds eye peppers.  Basil is overly abundant right now but I know it will not be in the coming months.  So I made a batch of pesto to put in the refrigerator for later. First I pulled all the leaves off of the stems.  I let them soak in a sink of cool salt water for about 30 minutes.  This gets all the bugs and dirt off of the leaves.

     After it is done soaking I placed it in a colander, and let it drip dry.  While it was drying I peeled four entire cloves of garlic.  The garlic peeling probably took about 45 minutes. That meant that there was plenty of time for the basil to dry off a bit.

     Now I went about putting all of the garlic in my food processor. I also put in a dash of white wine. Next, I piled basil leaves in to the top, and put the lid on only to add more basil until the shoot was full too.  I turned the food processor on and let it begin breaking everything down.  Once most of the leaves were down into the bowl I commenced adding in the olive oil.  I opened it to scrape the sides down one time, and then blended it for a few more seconds.

Now I wanted to save the pesto for a later date so I decided on freezing it.  I did not want to freezer the entire batch together so I divded it in to and ice cube tray.  Most trays will hold about two tablespoonfuls in each section.  This way it will know how much pesto I am grabbing out of the freezer at a time. 

After it was completely frozen I popped the cubes into a ziploc bag, and squeezed the air out. As a note pesto typically has pine nuts in it, bution was out and they are expensive.  I also have a difficult time finding them at the local stores. 

Now if only my tomatoes produced as well as my jalapenos I would be set.  As for right now I have way more peppers than tomatoes.  I will make as much salsa as I can with the tomatoes that I have.  I guess I will have to try making pepper jelly for the first time with all these extra peppers.







Cooking experiment

I love to experiment in my kitchen with everything. I will take a new recipe and twist around to make a new dish. I take my old recipes and twist them around for a new taste. Today I am going to attempt the latter. I am going to take my classic oatmeal peanut butter balls and coat them in white chocolate. I will post the recipe for ever one tonight if it works out to my liking. Really what could go wrong with peanut butter and chocolate. Well I am off to experiment with my two year old in tow. Cheesy Rice and Brats

Just wanted to share one of our quick go to meals that I keep handy for emergencies.


Cheesy rice and brats

2 boxes rice a roni naturals Parmesan and Romano
1 pack johnsonville mild Italian bratwurst

First cut the skin off of the brats.  Brown meat until mostly cooked. Then add  rice and follow the rice cooking directions.  It is fast and easy.  I usually serve it with green beans or cheesy broccoli.

Dog Biscuits

All right just for you mom!! The dog biscuit recipe.

PeaMutt Butter Dog Treats
1/4 C peanut butter
1 C water
1 Tbs vegetable oil
2 1/4 C whole wheat flour
1 C oatmeal

Preheat oven to 375 degrees.  In a large bowl combine peanut butter, oil, andwater.  Gradually add flour, then oatmeal.  Roll to 1/4 inche thickness and cut with small cookie cutter.  Place on an ungreased cookie sheet.  Bake at 375 for 35 minutes.  Makes apprx. 5 dozen

     Man was today busy.  Up early and off to the pediatrician. That took 2 hours because of the million kids sick with the flu.  Thank goodness our pediatrician office has 2 waiting rooms(sick/well)!! Anyway poor little K got 4 shots and a liquid vaccine today.  He was such a trooper.  Of course we get home and he is grumpy for the rest of the day.  He went to sleep a little late, but he was up when daddy got home so good trade I guess. 
     So in between grouchy baby, and everything else!! I managed to wash all of the cloth diapers, and a load of dishes.  Then it was left-overs for dinner.  Sneaking in a little bit of blog work, and balancing the check book.  Tomorrow will be full of exciting stuff like paying all the bills oh joy!!

     Well today's big accomplishment was vacuuming the downstairs.  Mixed in with juggling the baby, and making dinner.  Thank you who ever invented the crock pot!! That kitchen gadget is so handy.  Dropped a chicken in covered it in potatoes, and add some spice.  Tada dinner made itself. 
     I think the little man is getting that second tooth right now he was clingy and grumpy all day.  That just means tomorrow should be very exciting.  I mean who would not enjoy going to the pediatrician for shots with a teething baby!!!  So I hope I get enough sleep tonight. I really am not anticipating anything fun tomorrow.  Oh and to throw it in we have/need to go grocery shopping tomorrow.

     Well today we went and got Korvin's picture done in his Halloween outfit, that will not fit by Halloween.  We got a few done in a cute little sweater outfit that Erin got for him.  I am in LOVE with some of the pics we captured today!!! I can hardly wait to post them online for the fam!!  Maybe some for all of you blog guys too.  Poor little guy has no idea on Monday he is getting his 6 months shots at the pediatrician office. 
     The new blog is coming along nicely.  I am getting a few weeks worth of recipes set up.  I figure I need a stock pile for those days K wil just not let me type out a recipe.  Then we paid some bills, and played some games.  The dishes went into the dish washer, and dinner was cooked. 
     Now off to do some kitchen clean up, get ready for bed, and do my Bible reading for the day. Oh yeah,the super exciting news!!!! (DRUM ROLL PLEASE!) I got a baby sitter for tomorrow so hubby and I can go out ALONE!!
