What is in my Head Today

     Well the first thing that pops into my head is the fact that I have been stalking my email to see if my Beachbody order shipped.  It finally did hooray.  Now it is all down to the Fedex people.  Not to worry I have signed up for alerts to come to my email for every update from Fedex.  I might be just a little bit excited.

     In other news I cooked a meat less dinner that was awesome.  Hubby of course thought it needed meat, but he did not cook it so to bad.  He ate it anyway, and had to agree that it was good.  I will say that a little chicken that has been marinated would have been awesome on it.  We had a noodle dish with garlic, onion, bell pepper, broccoli, and cauliflower. K1 of course vetoed everything, but the noodles.  He has recently become extremely picking.  I think he is just trying to voice his opinion on the matter.  Eventually he does go back and eat it when he realizes that nothing else will be served.Crazy kid actually asked me to make him mac and cheese.  There are no extra meals at our house.  You eat what was served or go with out.

     Completely random thought from hubby.  Last night he was asking me to pre-order a video game so that we can play it together.  When we first got married I played WOW with him, and it was fun.  However once the kids got here I quit playing.  It was to much trouble for me to keep up with leveling a player, and keep up with the house and kids.  I tried for a bit after K1 was born, but it was no fun to rush through chores to play a game for fifteen minutes.  Long story short I ordered the game.  I guess we will go to scheduling time we will play on weekends.

     I also want to say thank you to Glo Sews for our second Liebster blog award.  I will get a post out for that some time soon Glo.

     Does your significant other have foods that they just will not eat?  What activites do you miss doing with your spouse since you had kids?  Alternately, what activities do you wish your spouse would do with you even if you do not have kids.

The Wheels Are Spinning!!

     So busy day around these parts.  Hubby is on duty so no break from the kiddos in sight until some time on Friday.  We made it through are day safely, and with only minor potty train accidents.  That screams victory at our house.  Dinner was left overs because Daddy was on the ship, so no reason for me to cook myself a meal.  The kids still really do not eat enough for me to justify cooking a meal with no other adults at the house.

    Then my friends tells me I should market one of my skills.  She may be right on with that thought.  So my brain is spinning 90 miles an hour with questions.

  1. What would I call my business?
  2. Is that name already taken on the web?
  3. Would people really want to buy that from me?
  4. How would I start it off?
  5. Do I build a client list first, or start on the product?
  6. When is a realistic goal to launch my product?
  7. Will my husband think I am insane?
  8. Will this benefit my family in the long run?
  9. Why did I never think of this my self?
  10. Then just a general AHHHHHH??? As I sit here pondering all of the above.
I am a total "A" personality.  I love to make list, and I have notebooks all over my house.  The good news is with the hubby on duty I can stay up making list about this pending venture, and not feel guilty.  I tend to feel guilty when I don't make some time every night for the hubby.  I think that having spouse time every night is important.  Ecspecially when the military makes sure he has duty every four days.    

Pesto

     Well here is a picture of all the things that the garden had to offer last night. We had basil, rosemary, savory, tomatoes, jalapenos, and birds eye peppers.  Basil is overly abundant right now but I know it will not be in the coming months.  So I made a batch of pesto to put in the refrigerator for later. First I pulled all the leaves off of the stems.  I let them soak in a sink of cool salt water for about 30 minutes.  This gets all the bugs and dirt off of the leaves.

     After it is done soaking I placed it in a colander, and let it drip dry.  While it was drying I peeled four entire cloves of garlic.  The garlic peeling probably took about 45 minutes. That meant that there was plenty of time for the basil to dry off a bit.

     Now I went about putting all of the garlic in my food processor. I also put in a dash of white wine. Next, I piled basil leaves in to the top, and put the lid on only to add more basil until the shoot was full too.  I turned the food processor on and let it begin breaking everything down.  Once most of the leaves were down into the bowl I commenced adding in the olive oil.  I opened it to scrape the sides down one time, and then blended it for a few more seconds.

Now I wanted to save the pesto for a later date so I decided on freezing it.  I did not want to freezer the entire batch together so I divded it in to and ice cube tray.  Most trays will hold about two tablespoonfuls in each section.  This way it will know how much pesto I am grabbing out of the freezer at a time. 

After it was completely frozen I popped the cubes into a ziploc bag, and squeezed the air out. As a note pesto typically has pine nuts in it, bution was out and they are expensive.  I also have a difficult time finding them at the local stores. 

Now if only my tomatoes produced as well as my jalapenos I would be set.  As for right now I have way more peppers than tomatoes.  I will make as much salsa as I can with the tomatoes that I have.  I guess I will have to try making pepper jelly for the first time with all these extra peppers.

     I fully believe that God, and love for my kids got us to the end of the day.

     We started our morning with diaper leak on my Ken man.  Later Korvin, my potty trainer had a poop disaster. I will simply leave it at the description of muddy foot prints around my kitchen.  We made it past dinner.  Then not 30 minutes after they are tucked in bed both boys fill their pants.


     So after multiple loads of laundry, and general clean up the day is ending.  We all survived, and I did not lose my mind.  I am certain God kept my on the right path today.  The love for my children only made the clean up process a little better.  Korvin dearly loves depositing things in the washing machine which helps too.





















Now off to a little adult time before bed! Going to start fresh in the morning, and see what the day brings.

And All That Jazz...

We went and got our taxes done the other day, and I was pleasantly surprised with the amount of the return.  We will be out of debt completely  by the time we move.  Hopefully we will remain debt free since we will only have one house payment when we move back to our house.

However in preparation for our move all the animals went to the vet today.  Toulouse the cat has a UTI, but no big deal just a few antibiotics.  Maddie on the other hand has two teeth that need to be pulled.  That will be quite expensive I am sure.  So I have scheduled her last trip to the vet in NC for the end of February.

Due to our trip to the vet to pick up all the animals, we returned home about the same time as B.  This resulted in him helping cook dinner which was rather enjoyable.  We made a quick and easy Alfredo sauce that taste pretty much like the stuff from the jar.  Added a little chicken and we were good to go.  As per usual K1 refused to eat poultry.  I will never figure him out.  Chicken nuggets are ok, but no other poultry.


Quick Alfredo

4oz (half block of nuetcehfal also called 1/3 fat cream cheese)
1 can 15oz chicken broth
4 Tbs flour
1/4 Cup Parmesan cheese
1Tbs garlic powder
pepper to taste

This is enough sauce for about a half pound of pasta.  Add all ingredients to a sauce pan and stir continuously until all the cheeses melt.  Continue cooking until the consistency is what you like.  It should reach an Alfredo consistency rather quickly once the cheeses melt.

Cheesy Rice and Brats

Just wanted to share one of our quick go to meals that I keep handy for emergencies.


Cheesy rice and brats

2 boxes rice a roni naturals Parmesan and Romano
1 pack johnsonville mild Italian bratwurst

First cut the skin off of the brats.  Brown meat until mostly cooked. Then add  rice and follow the rice cooking directions.  It is fast and easy.  I usually serve it with green beans or cheesy broccoli.

The world is spinning out of control today.  I felt increasingly lousy all day, down to the point of feeling like tossing my cookies during dinner.  My dear husband was gone the past two nights at a conference, and got home late in the afternoon today.  Thankfully he made us fried rice for dinner with the left overs we had in the refrigerator.


K1 spent most of the day in an odd move his self.  He was either in trouble or crying for some unknown reason all day.  K2 decided he needed to nurse ever 90 minutes today.

Progress Made!!

     Well today's big accomplishment was vacuuming the downstairs.  Mixed in with juggling the baby, and making dinner.  Thank you who ever invented the crock pot!! That kitchen gadget is so handy.  Dropped a chicken in covered it in potatoes, and add some spice.  Tada dinner made itself. 
     I think the little man is getting that second tooth right now he was clingy and grumpy all day.  That just means tomorrow should be very exciting.  I mean who would not enjoy going to the pediatrician for shots with a teething baby!!!  So I hope I get enough sleep tonight. I really am not anticipating anything fun tomorrow.  Oh and to throw it in we have/need to go grocery shopping tomorrow.

     Well today we went and got Korvin's picture done in his Halloween outfit, that will not fit by Halloween.  We got a few done in a cute little sweater outfit that Erin got for him.  I am in LOVE with some of the pics we captured today!!! I can hardly wait to post them online for the fam!!  Maybe some for all of you blog guys too.  Poor little guy has no idea on Monday he is getting his 6 months shots at the pediatrician office. 
     The new blog is coming along nicely.  I am getting a few weeks worth of recipes set up.  I figure I need a stock pile for those days K wil just not let me type out a recipe.  Then we paid some bills, and played some games.  The dishes went into the dish washer, and dinner was cooked. 
     Now off to do some kitchen clean up, get ready for bed, and do my Bible reading for the day. Oh yeah,the super exciting news!!!! (DRUM ROLL PLEASE!) I got a baby sitter for tomorrow so hubby and I can go out ALONE!!

     So I was just sitting here thinking that nothing got done today, and we did not go any where.  That leaves nothing to write about.  However upon further evaluation! I managed 2 loads of laundry, cooked a 3 course dinner, and entertained th baby today.  We also fit in a really fun bath time to today.  K love to play in the water.
     Best part of the day?  The AC started working again randomly.  The weather is not bad here it is just so humid it is miserable.  Anyway not much else got done as K was quite a handful today.

Research

     Today was spent doing some blog world research.  Along with the polling of some good friends on what my main blog should be about.  All that along with balancing a grouchy, teething, 5 month old kidlet.  Some where in the midst I made dinner, and found some leftovers for my lunch.  The entire time chasing two cats from under my feet due to our new found fly invaders.  Since the air conditioner broke the other day we are stuck with the windows open and fans blowing in.
     The evening is filled with stuff.  Hubby came home from a rough work day.  Next the landlord comes to look at the AC.  Now to clean up dinner, finish the nightly television show chosen on netflix.  On to a little more blogging research.  I want to thank all of you that took time to view the blog, and maybe click some links.  The incoming revenue has increase significantly.  Just in the few days I have been at it all i can see a difference.
     This blog is really turning out to be a lot of fun.  No as long as I can keep the one I am planning fun then it is game on.  Well off for a little WOW with the hubby and brother before bed.  Later readers!! Thanks again

Research

(Not Really)  I will probably keep this blog up to release some steam.  Anyway!! Looking for some ideas for a new topic.  I find that I am not really well versed in any one thing.  However I am good at a lot of things.  The ideas I currently have rolling around are:  

 1: A blog with a new recipe every day entitled whats for dinner with extra entries for snack and drinks
2: Something to do with container gardening in small spaces.  Like apartments  or  rented homes.

Do either of those topics interest anyone?

Ahhhhhhhhhhhh!

     Well the day is slowing down.  K is down for his nap before he gets up for dinner and a bath.  I have pot roast in the slow cooker awaiting the hubby.  The dogs are passed out on their beds.  So after juggling a baby, making dinner, and paying bills today I still feel like nothing is accomplished.
     To top it all off the AC broke last night so everyone in the house is sweating, or at least sticky all day.  This is the 3rd time the AC has gone out this summer. No fun in my book!!!!At least the little man is a bit older and tolerates the heat a little better this time.  Last time it went out he was 3 weeks old.  Top thing to be thankful for today it was overcast with a chance of rain.  At least the temperature stayed below 90F.
     Hopefully it will cool off by the time hubby gets home.  I am not totally in love with this military recruiting duty, but it works and he gets to come home and see K most days.  Some days poor hubby works so late the wee man has gone to bed long before his dad gets home.
     If everything goes down as planned I might be able to play some World of Warcraft tonight.  Being my guilty pleasure I do like to lose my self in a video game some times.  I get to go to my own little world and ignore everyone if I want.  I hope one day to get back to my scrap booking as a side hobby, but for now it is just to much work.  Maybe if I find a place to leave a craft area set up.  Well back to the real world!! See you later!!
